This week comes inspired by friends in Texas.
The beef ribs have been hung in Dunwood Farm’s new salt chamber and are incredible.
The salad is something we eat at our friends place Stiles Switch in Austin, TX. Using beautiful English heritage tomatos, my pickled cucumbers and feta as a replacement of queso fresco.
The beans are what our dear friend Alton makes us and are less tomato based than what some folk are used to over here, Alton makes a famous seasoning called Chupacabra which is what i based my seasoning on.
It’s a meal of food close to our heart and reminds us of happy times travelling Texas.
