Intermediate Fire Cooking (£150pp, course lasts approx 6 hours)
This course is for people who already have some knowledge of fire cooking and smoking.
*Once everyone is settled in we will dive straight into the final stages of a Brisket and Pork cook and go through when to start to end your cook, the crucial stages of when to take meat out, how to rest meat and how to hold meat to serve.
*After this we will go back to the beginning, trim and season learning tips and tricks of cooking.
*Making sides like Salsas, Pickles, Sauces, Tortilla and the basics of fermenting.
*Sit down with food and a Q&A
Course place is for one person. All courses start at 10am
